Steve's Dark Chocolate & Chilli Bacon Shards

  • 300gm Barossa Fine Foods Gourmet Bacon, thinly sliced
  • 200gm Lindt 90% Dark chocolate
  • 1 tbls Chilli Flakes


  1. To prepare the bacon, preheat the oven to 180℃, line a baking tray with baking paper. Remove the rind from the bacon and arrange the bacon on the tray in a single layer. Place in the oven and allow to cook until crispy, turning once whilst cooking. Drain on paper towel once cooked.
  2. Place the chocolate in a heatproof bowl and melt over a saucepan of hot water. Dip the bacon shards in the chocolate halfway up the pieces, place on a sheet of baking paper, repeat with all of the pieces, sprinkle the chocolate with the chilli flakes. Allow to set before serving.
