Smoked Chorizo Baked Beans

Ingredients
- 150g Barossa Fine Foods chorizo, diced
- 1 tbsp olive oil
- ½ brown onion, chopped
- 1 clove garlic, crushed
- 1 red capsicum, chopped
- 1 x 425g can butter beans, drained
- 1 x 425g can diced tomatoes
- 5 sprigs thyme
- 1 tbsp brown sugar
- Sea salt & black pepper, to taste
Method
- Heat the olive oil in a saucepan over medium heat. Sauté the onion and garlic until soft and translucent. Add the chorizo and cook for a few minutes until lightly golden. Add the capsicum and cook until softened, then reduce the heat.
- Add the diced tomatoes and cook over low heat for 5 minutes. Stir in the butter beans and thyme, add the brown sugar and simmer for a further 5–8 minutes.
- Season with sea salt and cracked black pepper to taste. Serve on toasted sourdough with poached eggs, and garnish with chopped thyme.
