Smoked Chorizo Baked Beans

Ingredients

  • 150g Barossa Fine Foods chorizo, diced
  • 1 tbsp olive oil
  • ½ brown onion, chopped
  • 1 clove garlic, crushed
  • 1 red capsicum, chopped
  • 1 x 425g can butter beans, drained
  • 1 x 425g can diced tomatoes
  • 5 sprigs thyme
  • 1 tbsp brown sugar
  • Sea salt & black pepper, to taste

Method

  1. Heat the olive oil in a saucepan over medium heat. Sauté the onion and garlic until soft and translucent. Add the chorizo and cook for a few minutes until lightly golden. Add the capsicum and cook until softened, then reduce the heat.
  2. Add the diced tomatoes and cook over low heat for 5 minutes. Stir in the butter beans and thyme, add the brown sugar and simmer for a further 5–8 minutes.
  3. Season with sea salt and cracked black pepper to taste. Serve on toasted sourdough with poached eggs, and garnish with chopped thyme.
