New York Pastrami Sandwich

Ingredients
- 200g Barossa Fine Foods pastrami, thinly sliced
- 8 slices sourdough or rye bread
- 200g sauerkraut
- 2 dill pickles, sliced
- 200g Swiss cheese
- Butter
- Russian dressing
RUSSIAN DRESSING
- 1 cup good quality whole egg mayonnaise
- 2 tsp horseradish
- 1 tbsp Worcestershire sauce
- ΒΌ cup sriracha sauce
- 2 tbsp onion, finely chopped
- 1 tbsp parsley, finely chopped
Method
RUSSIAN DRESSING
- To make the Russian dressing, place all ingredients in a bowl and mix well until combined.
Assemble the Sandwiches
- To make the sandwiches, layer a slice of bread with the pastrami, sauerkraut, dill pickles and cheese. Place the remaining slice of bread on top. Butter the outside of each slice of bread.
- In a frypan over medium-low heat, place the sandwich in the pan buttered side down. Once in the pan, butter the top side of the bread. Cook until the first side is golden brown, flip the sandwich over and cook until the other side is also golden and the cheese has melted.
- Serve with Russian dressing.
