Ham, Chèvre & Cherry Tomato Tart

Ingredients
- 1 sheet (300g) puff pastry
- 100g Barossa Fine Foods Farmer's Wood Smoked Ham, torn into pieces
- ¼ cup tomato pizza sauce
- 300g heirloom cherry tomatoes, halved
- 100g chèvre
- 1 egg yolk
- 1 tbsp milk
- 4 sprigs oregano
- 5 sprigs flat-leaf parsley
- Sea salt & freshly cracked black pepper, to season
Method
- Preheat a fan-forced oven to 180°C.
- Place the sheet of puff pastry onto a lined baking tray.
- Using a fork, gently prick the base of the pastry, leaving a 1cm border around the edge.
- Evenly spread the tomato pizza sauce over the pricked area. Top with the halved cherry tomatoes and torn ham, then dot the chèvre evenly across the tart.
- In a small bowl, whisk together the egg yolk and milk. Brush this mixture around the border of the pastry.
- Place the tart into the preheated oven and bake for 25–30 minutes, or until the pastry is golden brown and the base is cooked through.
- Remove from the oven and transfer to a cooling rack. Allow to rest for 10–15 minutes.
- Top with oregano and parsley, season with sea salt and freshly cracked black pepper, and serve with a garden salad or rocket.
