Caramelised Onion Relish

Ingredients
- 1kg Brown onions, sliced
- 2 tbls Olive Oil
- ⅓ cup Brown Sugar
- ⅓ cup Balsamic Vinegar
- 1 tsp Sea Salt
- Black Pepper, cracked
Method
- Heat the Olive Oil in a heavy based pot over medium heat, add the onions & cook for 10-15 mins, stirring frequently until the onion is soft.
- Reduce the heat to low, add the sugar & balsamic vinegar, season with sea salt & pepper & cook for 15 mins or until the onions are caramelised & the sauce thick.
- Store in sterilised jars.
