Thyme & Garlic Roast Leg Of Lamb With Mint Sauce

Ingredients

  • 1.5 - 1.8 kg leg of lamb
  • 2-3 garlic cloves, sliced
  • 6 sprigs thyme
  • Olive oil
  • Sea salt
  • Black pepper

Mint Sauce

  • 1 bunch of mint
  • 1 tsp brown sugar
  • 1 tbsp hot water
  • 3 tbsp white wine vinegar
  • Sea salt

Method

  1. Remove the leg of lamb from the fridge one hour prior to cooking, and preheat the oven (or a hooded BBQ) to 200 °C.
  2. With a small, sharp knife, make 8 to 10 small incisions in the leg of lamb; in each of these, place a slice of garlic and a sprig of thyme.
  3. Drizzle olive oil over the leg, and season it with sea salt and black pepper.
  4. Place the lamb on a rack in a baking tray and cook it in the oven for approximately 1 hour and 30 minutes. Once cooked, remove it from the oven, loosely cover it with foil, and allow it to rest for 10 to 15 minutes before carving.
  5. Serve with roasted vegetables, steamed greens, and homemade mint sauce.
  6. For the mint sauce, wash the bunch of mint and pick the leaves.
  7. Finely chop the mint and place it in a small bowl; mix in the sugar, a pinch of salt, the hot water, and the vinegar.
