South Australian Mussel, Prawn, Tomato & Bacon Spaghetti

Ingredients
- 500g Angelakis pot-ready mussels
- 400g Angelakis South Australian cooked prawns
- 100g Barossa Fine Foods gourmet bacon
- 1 ½ tbsp olive oil
- 50g butter
- 1 small brown onion, finely chopped
- 3 cloves garlic, finely chopped
- 1 cup white wine
- 1 x 400g can crushed tomatoes
- 1 cup passata
- 2 tbsp tomato paste
- 2 anchovies (optional)
- 1 tsp sugar
- Sea salt
- Black pepper
- Italian parsley, to serve
- Pangkarra wholegrain spaghetti
Method
- Cook the spaghetti according to packet instructions. Drain and set aside.
- Cut the bacon into small 1 cm pieces.
- Heat a large frying pan over medium heat. Add the olive oil and bacon and cook until lightly golden. Add the butter, then sauté the onion and garlic until soft and fragrant.
- Add the white wine and simmer briefly to reduce slightly. Stir in the crushed tomatoes, passata, tomato paste, anchovies and sugar. Season with sea salt and cracked black pepper. Cover and simmer gently for 7–10 minutes.
- While the sauce is simmering, rinse the mussels under cold water and drain well. Peel and devein the prawns, leaving the tails intact if preferred.
- Remove the lid from the sauce and add the mussels, prawns and cooked spaghetti. Cover and simmer for a further 5 minutes, or until the mussels have opened. Discard any mussels that remain closed.
- Toss gently to combine. Sprinkle generously with chopped Italian parsley and serve immediately.
