Pork & Pale Ale Sausage on Bread

Ingredients

  • 1 pkt Barossa Fine Foods Pork & Pale Ale Sausages
  • 2 tbsp olive oil
  • 2 slices thick-cut sourdough
  • 1 cup rocket
  • 4 tbsp Dijon mustard
  • 4 tbsp tomato relish
  • ¼ cup caramelised onions
  • 1 cup crispy onion rings
  • Sea salt & cracked black pepper, to season

Method

  1. Place a non-stick frypan over high heat. Add the oil and once hot, place the sausages into the pan. Cook for 8-10 minutes until golden brown and cooked through. Alternatively, preheat a fan-forced oven to 200°C, place the sausages on a lined baking tray and cook for 10 minutes until rich golden brown.
  2. Place the sliced sourdough onto serving plates or a platter. Spoon the mustard and relish evenly onto each slice, then top with rocket.
  3. Slice 4 sausages in half lengthways, then place 4 half-slices onto each piece of sourdough. Top each with 1 whole sausage.
  4. Add the caramelised onions, and top with crispy onion rings just before serving.
