Gourmet Meatballs with Chimichurri

Ingredients
- 2 x 450g packets Barossa Fine Foods gourmet meatballs
- 2 tbsp olive oil
- 1 cup flat-leaf parsley leaves
- 2 tbsp oregano leaves
- ½ cup coriander leaves
- 2-3 cloves garlic
- ⅓ cup olive oil
- 2 tbsp red wine vinegar
- 1 tsp dried chilli flakes
- Sea salt
- Ground black pepper
Method
- Preheat the oven to 180°C.
- Heat a large non-stick frypan over a medium heat, add the olive oil & fry the meatballs in batches, turning frequently until browned on all sides. Place the meatballs on a tray lined with baking paper once they are all browned and place in the oven for 7–10 minutes or until cooked through. Serve with the fresh chimichurri and cocktail forks.
- For the fresh chimichurri sauce, in a small food processor place the garlic, parsley, oregano & coriander leaves, pulse until all herbs are finely chopped. Stir through the olive oil & red wine vinegar, taste and season with sea salt and ground black pepper.
