Gourmet Meatballs with Chimichurri

Ingredients

  • 2 x 450g packets Barossa Fine Foods gourmet meatballs
  • 2 tbsp olive oil
  • 1 cup flat-leaf parsley leaves
  • 2 tbsp oregano leaves
  • ½ cup coriander leaves
  • 2-3 cloves garlic
  • ⅓ cup olive oil
  • 2 tbsp red wine vinegar
  • 1 tsp dried chilli flakes
  • Sea salt
  • Ground black pepper

Method

  1. Preheat the oven to 180°C.
  2. Heat a large non-stick frypan over a medium heat, add the olive oil & fry the meatballs in batches, turning frequently until browned on all sides. Place the meatballs on a tray lined with baking paper once they are all browned and place in the oven for 7–10 minutes or until cooked through. Serve with the fresh chimichurri and cocktail forks.
  3. For the fresh chimichurri sauce, in a small food processor place the garlic, parsley, oregano & coriander leaves, pulse until all herbs are finely chopped. Stir through the olive oil & red wine vinegar, taste and season with sea salt and ground black pepper.
