Gourmet Meatballs with Chimichurri

Ingredients
- 2 (450gm packets) Barossa Fine Foods Gourmet Meatballs
- 2 tbls Olive Oil
- 1 Cup Flat leaf parsley leaves
- 2 tbls Oregano leaves
- ½ Cup coriander leaves
- 2-3 Cloves garlic
- ⅓ Cup Olive Oil
- 2 tbls Red Wine Vinegar
- 1 tsp Dried Chilli Flakes
- Sea Salt
- Ground black pepper
Method
- Preheat oven 180℃
- Heat a large non stick frypan over a medium heat, add the olive oil & fry the meatballs in batches, turning frequently until browned on all sides. Place the meatballs on a tray lined with baking paper once they are all browned and place in the oven for 7-10 minutes or until cooked through. Serve with the fresh chimichurri and cocktail forks.
- For the fresh chimichurri sauce, in a small food processor place the garlic, parsley, oregano & coriander leaves, pulse until all herbs are finely chopped. Stir through the olive oil & red wine vinegar, taste and season with the sea salt and ground black pepper.
