Dutch Smoked Beef, Heirloom Tomato & Parmesan Salad

Ingredients

  • 200g Dutch Smoked Beef, thinly sliced
  • 1 punnet strawberry tomatoes
  • Basil leaves
  • Olive oil
  • Balsamic glaze
  • Cracked black pepper

Method

  1. Wash the tomatoes, slice and arrange on a serving platter. Gently fold the Dutch smoked beef into rosettes and place over the tomatoes. Shave parmesan over the salad, then sprinkle with basil leaves. Drizzle with olive oil and balsamic glaze, then finish with cracked black pepper.

COOK’S TIP

  1. If beefsteak tomatoes are unavailable, substitute with vine-ripened or Roma tomatoes.
  2. For a decadent twist, drizzle with truffle-infused oil and finish with shaved truffle parmesan.
