Wild Smoked Salmon Fettuccine

Ingredients

  • 500g fettuccine
  • ½ cup extra virgin olive oil
  • 1 large brown onion, peeled and roughly chopped
  • 4 cloves garlic, finely sliced
  • 2 pkts Barossa Fine Foods Wild Smoked Salmon
  • ¼ cup verjuice or white wine
  • 500ml thickened cream
  • ¼ cup flat-leaf parsley, roughly chopped
  • 1 bunch chives, finely chopped
  • Sea salt and cracked black pepper, to season

Method

  1. Place a large pot of salted water over high heat. Once boiling, add the fettuccine and cook for 15-18 minutes or until al dente. Remove from heat, drain the water, then toss through ¼ cup of olive oil. Set aside.
  2. Roughly chop 1 packet of wild smoked salmon and set aside.
  3. Place a large non-stick frypan over medium-high heat. Add the remaining olive oil. Once hot, add the onion and cook for 5 minutes or until starting to turn golden brown. Add the garlic and cook for a further 5-7 minutes.
  4. Deglaze the pan with verjuice or white wine. Reduce by half, then add the cream and bring to the boil. Add the roughly chopped wild smoked salmon and the fettuccine. Continue to cook until the cream has reduced by half and is thickened and coating the pasta. Season to taste.
  5. Add the parsley and chives, combine well and serve evenly onto 4 serving plates. Top each serve with the remaining wild smoked salmon.
