Sausage Roll Wreath

Ingredients

  • 480g Barossa Fine Foods traditional pork sausages
  • 1 sheet butter puff pastry
  • 2 egg yolks
  • 2 tbsp full-cream milk
  • Fresh bay leaf, rosemary & thyme to garnish

Method

  1. Cut the pastry into 2cm-wide strips, keep chilled and set aside.
  2. Preheat a fan-forced oven to 180°C.
  3. Place the sausages onto a lined baking tray and shape into a circle. Wrap the pastry strips around the sausages, leaving a 1cm gap between each strip.
  4. Make an egg wash by mixing the egg yolks and milk together.
  5. Brush the egg mix over the pastry, season with sea salt, then place into the pre- heated oven and bake for 20-25 mins, or until golden brown.Brush the egg wash over the pastry, season with sea salt, then place into the preheated oven and bake for 20–25 minutes, or until golden brown.
  6. Remove from the oven and garnish with fresh bay leaves, rosemary and thyme, then serve.
