Saltbush Crusted Smoked Beef & Caramelised Onion Relish Panini

Ingredients
- 4 good quality panini
- 2 pkts 80g Barossa Fine Foods Saltbush Crusted Smoked Beef
- 2 cups rocket leaves
- 8 slices Swiss cheese
- 2 ripe tomatoes, sliced
- ½ cup Beerenberg Caramelised Onion Relish
Method
- Cut each panini in half lengthways.
- On the bottom halves, evenly layer the tomato slices, rocket, and 2 slices of Swiss cheese per panini.
- Evenly divide the smoked beef over the cheese, then spoon over the caramelised onion relish.
- Top with the remaining panini halves and serve.
