Prawn & Pancetta Cocktail

Serves: 4
Ingredients
- 4 Slices Barossa Fine Foods Pancetta
- 1 tbspn extra virgin olive oil
- 4 cups iceberg lettuce, shredded
- 20 cooked king prawns, peeled & de-veined
- 4 tbspn seafood sauce
- 1 lemon cut into wedges, to garnish
Method
- Place a medium non stick fry pan over a medium-high heat. Add the olive oil, then, once hot, place in the slices of pancetta and cook for 2 to 3 mins on each side until golden brown and crispy. Remove the pancetta from the pan and place onto paper towel to drain.
- Chop 16 of the cooked prawns into bite- sized pieces. Place into a mixing bowl and dress with seafood sauce. Sit aside.
- To serve, evenly divide the iceberg lettuce between 4 serving glasses, then top with cut prawns and seafood sauce.
- Place a crispy slice of pancetta and one intact prawn on top of each serving.
- Serve with a wedge of lemon.
