Prawn & Pancetta Cocktail

Ingredients

  • 4 Slices Barossa Fine Foods Pancetta
  • 1 tbspn extra virgin olive oil
  • 4 cups iceberg lettuce, shredded
  • 20 cooked king prawns, peeled & de-veined
  • 4 tbspn seafood sauce
  • 1 lemon cut into wedges, to garnish

Method

  1. Place a medium non stick fry pan over a medium-high heat. Add the olive oil, then, once hot, place in the slices of pancetta and cook for 2 to 3 mins on each side until golden brown and crispy. Remove the pancetta from the pan and place onto paper towel to drain.
  2. Chop 16 of the cooked prawns into bite- sized pieces. Place into a mixing bowl and dress with seafood sauce. Sit aside.
  3. To serve, evenly divide the iceberg lettuce between 4 serving glasses, then top with cut prawns and seafood sauce.
  4. Place a crispy slice of pancetta and one intact prawn on top of each serving.
  5. Serve with a wedge of lemon.
