Mini Pepperoni, Bocconcini & Basil Pizzas

Ingredients
- 2 Barossa Fine Foods pepperoni
- 220g bocconcini
- Fresh basil leaves
- ½ cup green olives
Pizza Sauce
- 1 x 400g can crushed tomatoes
- 2 cloves garlic, finely chopped
- 1 tbsp Italian parsley, finely chopped
- 1 tbsp oregano, finely chopped
- 1 tbsp tomato paste
- 1 tsp olive oil
- Sea salt
- Cracked black pepper
Pizza Dough
- 1½ cups plain flour
- 1 tsp dried yeast
- tsp sugar
- ½ tsp sea salt
- ½ cup warm water
Method
- To prepare the pizza dough, combine the warm water, sugar and yeast in a jug. Stir and set aside in a warm place until bubbles form. In a food mixer fitted with a dough hook, place the flour and sea salt. With the mixer running on low speed, add the water and yeast mixture and mix until the dough comes together. Cover with a damp tea towel and set aside for 30 minutes, or until the dough has doubled in size. Once proved, remove from the bowl and portion into small pizzas. Roll out on a floured board.
- To make the pizza sauce, place the crushed tomatoes and tomato paste in a bowl and mix until combined. Add the fresh herbs, garlic and olive oil, then season with sea salt and black pepper.
- Spoon a little tomato sauce onto the pizza bases, top with torn bocconcini, thinly sliced pepperoni and scatter over the olives. Cook in a pizza oven or on a pizza stone in the oven at 200°C until the bases are golden brown and the toppings are cooked.
- To serve, sprinkle over the basil leaves.
