Christmas Charcuterie Tree

Preparation:
Ingredients
- 100g Barossa Fine Foods sliced pancetta
- 100g Barossa Fine Foods gypsy ham
- 100g Barossa Fine Foods smoked wagyu
- 100g Barossa Fine Foods hungarian salami
- 300g brie
- 300g aged cheddar
- 1 punnet blueberries
- 2 bunches rosemary
- 80g dried apricots
- 60g roasted whole almonds
- 4 slices dried orange
- 100g fresh cherries
- 100g fresh pine for garnishing
- 6 bay leaves for garnishing
Method
- To create the Christmas tree shape, begin by placing the salami as the trunk of the tree. Roll the remaining charcuterie into spirals and zig-zag upwards towards the top of the platter.
- Slice the brie & cheddar into wedges & cubes. Place on the platter on opposite sides of the charcuterie. Then, using the remaining ingredients, fill in the space to create a triangle shape.
- Finish the Christmas tree decoration by adding rosemary & bay leaves, using the orange slices as the star on top.
