Chicken Yiros With Hummus

Ingredients
- 600g Chicken Yiros
- 2 Lebanese cucumbers, sliced
- ½ red onion, sliced
- 2 cups salad leaves
- ½ cup Italian parsley leaves
- 100g feta, crumbled
- 4 large pita breads
- 1 tub tzatziki
Hummus
- 1 x 400g tin chickpeas, drained
- 2 garlic cloves
- 2 tbsp lemon juice
- 1 tsp ground cumin
- 1 tsp smoked paprika
- 2 tbsp tahini
- 2 tbsp water
- Sea salt and black pepper
- ¼ cup olive oil
Method
- To make the hummus, place the drained chickpeas, garlic, lemon juice, cumin, paprika and tahini in a small food processor. Blend until smooth, then add the olive oil in a steady stream until combined.
- Season with sea salt and pepper. Add water if the consistency is too thick.
- Cook the Chicken Yiros meat in a frypan over medium heat in batches, or on the BBQ.
- Warm the pita breads and serve with cucumber, onion, salad leaves, crumbled feta, tzatziki and homemade hummus.
