Chicken Yiros With Hummus

Ingredients

  • 600g Chicken Yiros
  • 2 Lebanese cucumbers, sliced
  • ½ red onion, sliced
  • 2 cups salad leaves
  • ½ cup Italian parsley leaves
  • 100g feta, crumbled
  • 4 large pita breads
  • 1 tub tzatziki

Hummus

  • 1 x 400g tin chickpeas, drained
  • 2 garlic cloves
  • 2 tbsp lemon juice
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 2 tbsp tahini
  • 2 tbsp water
  • Sea salt and black pepper
  • ¼ cup olive oil

Method

  1. To make the hummus, place the drained chickpeas, garlic, lemon juice, cumin, paprika and tahini in a small food processor. Blend until smooth, then add the olive oil in a steady stream until combined.
  2. Season with sea salt and pepper. Add water if the consistency is too thick.
  3. Cook the Chicken Yiros meat in a frypan over medium heat in batches, or on the BBQ.
  4. Warm the pita breads and serve with cucumber, onion, salad leaves, crumbled feta, tzatziki and homemade hummus.
