Traditional Pork Stir-Fry

Ingredients
- 1 x 480g pack Barossa Fine Food Traditional Pork Sausages, casings removed
- 3 Tbsp olive oil
- 3 Tbsp sesame oil
- 1 onion, sliced
- 1 red capsicum, sliced
- 2 carrots, thinly sliced
- 1 x 410g can baby corn, drained
- 1 x 227g can water chestnuts, drained
- 2 bok choy, chopped
- 2 cups bean shoots
- 1 cup spring onion, sliced
- ½ cup crispy shallots
- ½ cup oyster sauce
Method
- Remove the pork sausage meat from the casings and break it into bite-sized pieces. Set aside.
- Heat the olive and sesame oil in a large wok or frying pan over high heat. Once hot, add the pork sausage meat and cook for 4–5 minutes until browned. Remove from the pan and set aside, leaving the oil in the pan.
- Add the onion and carrots to the pan and cook for 3–4 minutes. Then add the capsicum, baby corn, water chestnuts and bok choy. Cook for another 2–3 minutes.
- Stir in the oyster sauce, return the cooked pork sausage meat to the pan and toss everything together well.
- Divide between 4 serving bowls and garnish with bean shoots, spring onion and crispy shallots. Serve immediately.
