Saltbush Crusted Smoked Beef, Pickles & Seeded Mustard on Sourdough

Ingredients

  • 8 slices good-quality sourdough
  • 5 x 80g pack Barossa Fine Foods Saltbush Crusted Smoked Beef
  • ¾ cup rocket
  • ¼ cup seeded mustard
  • 80g dill pickles, sliced
  • 4 tbsp chimichurri
  • ¼ cup unsalted butter
  • Sea salt & cracked black pepper, to season

Method

  1. Butter one side of each slice of bread, then place them on a board, buttered side facing up.
  2. Spread the seeded mustard, then layer with saltbush crusted smoked beef, pickles and rocket.
  3. Spoon over the chimichurri and season with sea salt and cracked black pepper.
  4. Top with the remaining slices of bread and serve.
