Saltbush Crusted Smoked Beef, Pickles & Seeded Mustard on Sourdough

Ingredients
- 8 slices good-quality sourdough
- 5 x 80g pack Barossa Fine Foods Saltbush Crusted Smoked Beef
- ¾ cup rocket
- ¼ cup seeded mustard
- 80g dill pickles, sliced
- 4 tbsp chimichurri
- ¼ cup unsalted butter
- Sea salt & cracked black pepper, to season
Method
- Butter one side of each slice of bread, then place them on a board, buttered side facing up.
- Spread the seeded mustard, then layer with saltbush crusted smoked beef, pickles and rocket.
- Spoon over the chimichurri and season with sea salt and cracked black pepper.
- Top with the remaining slices of bread and serve.
