Roasted Seasonal Greens with Gypsy Ham Crumble

Ingredients

  • 100g green beans
  • 1 bunch broccolini, trimmed stems
  • 200g Brussels sprouts, halved
  • 1 bunch asparagus, halved
  • 2 tbsp unsalted butter
  • 100g Barossa Fine Foods Gypsy Ham, finely chopped
  • 100g coarse sourdough breadcrumbs
  • ½ cup flat-leaf parsley, roughly chopped
  • 1/3 cup olive oil
  • Sea salt & cracked black pepper, to season

Method

  1. Bring a large pot of salted water to the boil over high heat.
  2. Add the beans, broccolini, Brussels sprouts and asparagus to the boiling water and cook for 2–3 minutes. Remove, strain and set aside.
  3. Heat a non-stick frying pan over medium-high heat. Add half of the olive oil. Once hot, add the Gypsy Ham and fry until crispy and golden brown. Then, add the breadcrumbs and continue frying for another 2-3 minutes. Remove from the heat, stir in the remaining olive oil and parsley and season to taste. Transfer to a dish, set aside and keep warm.
  4. Return the same pan to high heat, add the butter and once melted, add the greens. Sauté for 2–3 minutes or until slightly golden brown.
  5. Transfer the greens to a serving dish, top with the ham crumble and serve.
