Roasted Seasonal Greens with Gypsy Ham Crumble

Ingredients
- 100g green beans
- 1 bunch broccolini, trimmed stems
- 200g Brussels sprouts, halved
- 1 bunch asparagus, halved
- 2 tbsp unsalted butter
- 100g Barossa Fine Foods Gypsy Ham, finely chopped
- 100g coarse sourdough breadcrumbs
- ½ cup flat-leaf parsley, roughly chopped
- 1/3 cup olive oil
- Sea salt & cracked black pepper, to season
Method
- Bring a large pot of salted water to the boil over high heat.
- Add the beans, broccolini, Brussels sprouts and asparagus to the boiling water and cook for 2–3 minutes. Remove, strain and set aside.
- Heat a non-stick frying pan over medium-high heat. Add half of the olive oil. Once hot, add the Gypsy Ham and fry until crispy and golden brown. Then, add the breadcrumbs and continue frying for another 2-3 minutes. Remove from the heat, stir in the remaining olive oil and parsley and season to taste. Transfer to a dish, set aside and keep warm.
- Return the same pan to high heat, add the butter and once melted, add the greens. Sauté for 2–3 minutes or until slightly golden brown.
- Transfer the greens to a serving dish, top with the ham crumble and serve.
