Pancetta Wrapped Stuffing Balls

Ingredients
- 1 kg beef mince
- 2 tbspn rosemary leaves, chopped
- 2 tbspn lemon thyme
- 3 whole eggs
- 3 tbspn seeded mustard
- 1 1/2 cups course breadcrumbs
- 1/4 cup flat leaf parsley, roughly chopped
- 20 slices Barossa Fine Foods Pancetta
- Sea salt & cracked black pepper to season
Method
- Makes 20 stuffing balls
- Pre-heat a fan forced oven to 180°C.
- Place the mince, rosemary, thyme, mustard and eggs into a large mixing bowl. Combine well, then add in the breadcrumbs and season with salt and pepper. Combine well.
- Slightly wet your hands (to prevent the mixture from sticking to your hands) and form the mixture into 20 even balls in a slight oval shape.
- Place the balls onto a lined baking tray, then wrap each ball with a slice of pancetta.
- Place into the pre-heated oven and bake for 15 mins or until cooked through and golden brown.
- Remove and place onto a serving platter and serve with a relish of your liking.
