Pancetta Wrapped Stuffing Balls

Ingredients

  • 1 kg beef mince
  • 2 tbspn rosemary leaves, chopped
  • 2 tbspn lemon thyme
  • 3 whole eggs
  • 3 tbspn seeded mustard
  • 1 1/2 cups course breadcrumbs
  • 1/4 cup flat leaf parsley, roughly chopped
  • 20 slices Barossa Fine Foods Pancetta
  • Sea salt & cracked black pepper to season

Method

  1. Makes 20 stuffing balls
  2. Pre-heat a fan forced oven to 180°C.
  3. Place the mince, rosemary, thyme, mustard and eggs into a large mixing bowl. Combine well, then add in the breadcrumbs and season with salt and pepper. Combine well.
  4. Slightly wet your hands (to prevent the mixture from sticking to your hands) and form the mixture into 20 even balls in a slight oval shape.
  5. Place the balls onto a lined baking tray, then wrap each ball with a slice of pancetta.
  6. Place into the pre-heated oven and bake for 15 mins or until cooked through and golden brown.
  7. Remove and place onto a serving platter and serve with a relish of your liking.
