Mississippi Sausage Tacos

Ingredients

  • 1 x 480g pack Barossa Fine Foods Mississippi Sausages, skin removed & chopped
  • 3 tbsp taco seasoning
  • 3 tbsp sunflower oil
  • ½ iceberg lettuce, finely chopped
  • 1 avocado, small diced
  • 2 tomatoes, small diced
  • 1 medium red onion, finely chopped
  • 1 red chilli, sliced
  • 1 bunch coriander, roughly chopped
  • 6 soft taco shells
  • 2 limes, cut into wedges (optional)

Method

  1. Place a large non-stick frying pan over high heat. Add the sunflower oil, once hot add the sausage and fry for 3–4 minutes or until golden brown. Stir with a wooden spoon, breaking up the sausage as it cooks.
  2. Sprinkle the taco seasoning over the sausage and continue to cook for another 2–3 minutes. Remove from heat, set aside and keep warm.
  3. In a mixing bowl, combine the avocado, tomato, red onion, chilli and half of the coriander to make a salsa. Set aside.
  4. To assemble the tacos, take the soft taco shells and evenly divide the lettuce between them. Add the warm sausage mixture, then top with the salsa and remaining coriander.
  5. Serve with a wedge of lime.
