Serves: 4

Preparation: 10 Mins   Cooking: 25 Mins

Ingredients

  • 4 x 200g skin-on salmon fillets
  • 2 x 100g pack of Barossa Fine Foods Ham Off The Bone, finely chopped
  • 80g coarse sourdough breadcrumbs
  • 1/3 cup olive oil
  • 2 tbsp unsalted butter
  • ¼ cup flat-leaf parsley, chopped
  • 2 baby cos lettuces, washed and cut in half
  • 4 lemon wedges
  • Sea salt & cracked black pepper, to season

Method

  1. Cut two 5mm slits into the skin of each salmon fillet and place them on a lined baking tray. Set aside.
  2. Place a non-stick fry pan over a high heat. Add half of the olive oil and once hot, fry the ham until crispy. Add the butter and once melted add the breadcrumbs and cook for another 2-3 minutes. Remove from heat, add the remaining olive oil, mix through the parsley and season to taste.
  3. Preheat a fan-forced oven to 200°C.
  4. Once cool enough to handle, divide the ham mixture into four portions and place on top of the salmon fillets.
  5. Place in the preheated oven and bake for 15-20 minutes, or until the crumb is golden brown.
  6. Remove from the oven and serve with baby cos and lemon wedges.
