Ham Crusted Oven-Baked Salmon

Ingredients
- 4 x 200g skin-on salmon fillets
- 2 x 100g pack of Barossa Fine Foods Ham Off The Bone, finely chopped
- 80g coarse sourdough breadcrumbs
- 1/3 cup olive oil
- 2 tbsp unsalted butter
- ¼ cup flat-leaf parsley, chopped
- 2 baby cos lettuces, washed and cut in half
- 4 lemon wedges
- Sea salt & cracked black pepper, to season
Method
- Cut two 5mm slits into the skin of each salmon fillet and place them on a lined baking tray. Set aside.
- Place a non-stick fry pan over a high heat. Add half of the olive oil and once hot, fry the ham until crispy. Add the butter and once melted add the breadcrumbs and cook for another 2-3 minutes. Remove from heat, add the remaining olive oil, mix through the parsley and season to taste.
- Preheat a fan-forced oven to 200°C.
- Once cool enough to handle, divide the ham mixture into four portions and place on top of the salmon fillets.
- Place in the preheated oven and bake for 15-20 minutes, or until the crumb is golden brown.
- Remove from the oven and serve with baby cos and lemon wedges.
