German - Style Potato Salad

Ingredients
- 800g baby potatoes
- Barossa Fine Foods pancetta sliced
- 1/2 cup flat leaf parsley, roughly chopped
- 1 bunch finely chopped chives
- 2 tbspn seeded mustard
- 1 tbspn red wine vinegar
- 1/4 cup dill fronds
- 3 tbspn extra virgin olive oil to serve
- Sea salt & cracked black pepper to taste
Method
- Place the potatoes into a large pot of cold water, then place over a high heat. Bring to the boil and cook for 10 to 15 mins or until cooked through. Remove from the heat, drain off the water and set aside to slightly cool.
- Meanwhile, place a medium non-stick pan over a medium-high heat. Fry the pancetta for 3 to 4 mins on each side until crispy, then remove and place on paper towel to drain.
- Once the potatoes are cool enough to handle, cut them in half and place into a large mixing bowl. Add the mayonnaise, parsley, chives and mustard, then season and gently toss together.
- To serve, place onto a serving platter and drizzle with red wine vinegar & Extra Virgin Olive Oil. Lightly crumble the crispy Pancetta and sprinkle it on top, then garnish with dill.
