Garlic, Herb & Pancetta Smashed Potatoes

Ingredients

  • 1kg creme gold potatoes
  • 80g unsalted butter, diced
  • ¼ cup Extra Virgin Olive Oil
  • 1 bulb garlic, halved
  • 6 sprigs lemon thyme
  • ¼ cup rosemary leaves
  • 90g Barossa Fine Foods Pancetta
  • Sea salt, to season

Method

  1. Place the potatoes into a large pot of cold water. Place over high heat and bring to the boil. Cook for 15-20 minutes or until just cooked through — test by inserting a knife; it should slide in easily.
  2. Remove from the heat and drain off the water.
  3. Preheat a fan forced oven to 200°C.
  4. Place the potatoes onto a board. Using a small plate, gently press down on each potato to slightly flatten. Carefully transfer to a lined baking tray with the garlic.
  5. Top each potato with butter, then drizzle with olive oil and season with sea salt.
  6. Place into the preheated oven and roast for 20 minutes. Remove, sprinkle over the thyme and rosemary, add the pancetta and return to the oven for another 10-15 minutes.
  7. Remove from the oven and serve.
