Garlic, Herb & Pancetta Smashed Potatoes

Ingredients
- 1kg creme gold potatoes
- 80g unsalted butter, diced
- ¼ cup Extra Virgin Olive Oil
- 1 bulb garlic, halved
- 6 sprigs lemon thyme
- ¼ cup rosemary leaves
- 90g Barossa Fine Foods Pancetta
- Sea salt, to season
Method
- Place the potatoes into a large pot of cold water. Place over high heat and bring to the boil. Cook for 15-20 minutes or until just cooked through — test by inserting a knife; it should slide in easily.
- Remove from the heat and drain off the water.
- Preheat a fan forced oven to 200°C.
- Place the potatoes onto a board. Using a small plate, gently press down on each potato to slightly flatten. Carefully transfer to a lined baking tray with the garlic.
- Top each potato with butter, then drizzle with olive oil and season with sea salt.
- Place into the preheated oven and roast for 20 minutes. Remove, sprinkle over the thyme and rosemary, add the pancetta and return to the oven for another 10-15 minutes.
- Remove from the oven and serve.
