Hot Chilli Honey, Pancetta & Brie Bites

Ingredients
- 90g Barossa Fine Foods Pancetta
- 1 pkt Careme Puff Pastry
- 200g Triple Cream Brie
- ⅓ cup Beerenberg Cranberry Sauce
- 1 free range egg yolk
- 1 tbsp Beerenberg Hot Chilli Honey
- Lemon thyme sprigs, to garnish
Method
- Preheat a fan forced oven to 200°C.
- Place the pancetta onto a lined baking tray and place into the preheated oven. Cook for 8 minutes until golden and crispy, remove and set aside to cool.
- Cut 18 x 7cm discs of puff pastry and place onto a lined baking tray. Brush the edges with the egg yolk, then place into the preheated oven and bake for 7 minutes. Remove and gently press the centre of the pastry discs down to create a small divot.
- Cut the brie into 18 even pieces and place into the pastry divots. Top with cranberry sauce and return to the oven to bake for a further 5-6 minutes.
- Remove and top with crispy pancetta, broken into bite-size pieces. Drizzle with chilli honey, garnish with thyme and serve while warm.
- Note: The chilli honey is quite hot, so if you prefer a milder flavour, use sparingly.
