Barramundi Burgers with Smashed Avocado & Pickled Red Onions

  • 220g Barossa Fine Foods Barramundi Burgers
  • Brioche Burger Buns
  • Oakleaf Lettuce
  • 2 Avocados
  • Pickled Red Onion
  • 1 Cup Apple Cider Vinegar
  • 2 tbls Sugar
  • 2 ½ tsp Sea Salt
  • 2 Red Onions
  • Olive Oil


  1. Preheat a frying pan on a medium/high heat, add olive oil, then place the Barramundi Burgers and allow to cook. Flip to the other side and allow to cook for a further few minutes until the barramundi burgers are fully cooked and seared on both sides.
  2. Lightly warm your brioche buns, and add your barramundi burger, then begin stacking the fresh lettuce and smashed avocado to the burger.
  3. For the pickled red onion, use our Barossa Fine Foods Quick Pickled Red Onion recipe available on our website. Place the apple cider vinegar, sugar and sea salt into a bowl, whisk all ingredients together until the sugar and salt have dissolved. Slice the red onions and place in a sterilised jar, pour over the vinegar mixture and allow to sit at room temperature for one hour. Place in the fridge until required.
  4. Add your pickled onions to the burger stack and place the brioche bun on top to serve, then enjoy!
