Pesto Focaccia with Pancetta & Mozzarella

Ingredients

  • 1 loaf focaccia
  • 3 tbsp olive oil
  • 3 x 90g pack Barossa Fine Foods Pancetta
  • 200g mozzarella, sliced
  • 2 cups baby rocket
  • 100g sundried tomatoes
  • 100g pesto
  • Sea salt & cracked black pepper, to season

Method

  1. Slice the focaccia loaf in half lengthways and drizzle both halves with olive oil.
  2. Spread the pesto evenly over one half of the focaccia.
  3. On the other half, layer the rocket, sundried tomatoes, mozzarella and pancetta.
  4. Season with sea salt and cracked black pepper.
  5. Place the pesto-covered focaccia half on top to form a sandwich, then slice into four even pieces.
  6. Serve immediately.
