Pesto Focaccia with Pancetta & Mozzarella

Ingredients
- 1 loaf focaccia
- 3 tbsp olive oil
- 3 x 90g pack Barossa Fine Foods pancetta
- 200g mozzarella, sliced
- 2 cups baby rocket
- 100g sun-dried tomatoes
- 100g pesto
- Sea salt & cracked black pepper, to season
Method
- Slice the focaccia loaf in half lengthways and drizzle both cut sides with olive oil.
- Spread the pesto evenly over one half of the focaccia.
- On the other half, layer the baby rocket, sun-dried tomatoes, mozzarella and pancetta.
- Season lightly with sea salt and cracked black pepper.
- Place the pesto-covered focaccia half on top to form a sandwich, then slice into four even portions.
- Serve immediately.
