Korean Beef Salad

Ingredients

  • 600gm Korean Beef Stir Fry
  • 2 Carrots, julienned
  • ¼ Red Cabbage, finely sliced
  • 1 cucumber, sliced
  • ½ Spanish onion, sliced
  • ½ Bunch coriander, chopped
  • ¼ Bunch Mint

Dressing

  • ¼ Cup soy
  • 2 tbls white sugar
  • ¼ cup water
  • 3 tbls rice vinegar
  • 3 tbls sesame oil

Method

  1. Firstly, prepare the noodles…Place the Bean thread vermicelli (glass noodles) in a heatproof bowl & cover with boiling water for 5-8 minutes, rinse under cold water, drain & set aside.
  2. Next simply heat a wok over medium heat, add a little vegetable or sesame oil & stir fry beef strips for a few minutes till cooked.
  3. Arrange the glass noodles on a serving platter or large bowl add the salad mix then top with the cooked Beef, garnish with the fresh herbs & dress with the salad dressing
