Capsicum Rouille

  • 4 Slices White Bread
  • 250 gm Roasted Red Capsicums
  • 1 Clove Garlic, chopped
  • 1 Small Red Chilli, deseeded
  • 1 tbls Olive Oil
  • Sea salt & black pepper
  • 2 tbls Whole egg mayonnaise


  1. Place the slices of bread in a bowl & cover with cold water, allow to soak for 2 minutes. Squeeze excess water from the bread & place in a kitchen processor, add the roasted red capsicums, garlic, chilli & olive oil, blend until smooth. Stir through the mayonnaise, taste and season with sea salt & ground black pepper.


  1. Will keep in the fridge for five days.
