BBQ Char Siu Pork Hocks With Salad & Nuoc Cham

Ingredients

Nuoc Cham Cham Dressing

  • 1¼ Cup Fish sauce
  • ¼ Cup rice vinegar
  • 2 tbls white sugar
  • 125 ml water
  • 1 clove garlic, finely chopped
  • 1 small red chilli
  • 2 tbls lime juice

Pork Hocks

  • 1 Quantity of BBQ Char siu pork hocks (see basic recipe)
  • 1 cucumber, deseeded & sliced
  • 1 Green capsicum, deseeded & sliced
  • 1 Cup bean shoots
  • ½ Bunch coriander, washed & roughly chopped
  • ½ Bunch mint, washed & roughly chopped
  • 1 large packet of vermicelli noodles, cooked & drained
  • Nuoc Cham cham dressing
  • Barossa Fine Foods Pork crackling shard for garnish
  • 2 tsp toasted sesame seeds

Method

Nuoc Cham Cham Dressing

  1. place fish sauce, vinegar, sugar & water in a pan over medium heat and stir to combine.
  2. Bring mixture to just below boiling point, then set aside to cool.
  3. Add garlic, chilli & lime juice, stir to combine.

Pork Hocks

  1. Place the cucumber, green capsicum, bean shoots, coriander & mint in a bowl add the sesame seeds & toss to combine.
  2. Remove the meat from the bones & break into pieces
  3. To assemble place the noodles in the bottom of the bowl or serving platter, top with the BBQ Char Siu Pork and garnish with the pork crackling
  4. Serve with the Nuoc Cham Cham dressing on the side
