Barbecued Beef Rump With Salsa Verde

Ingredients

Salsa Verde

  • 1 bunch flat leaf parsley
  • 1 cup Basil leaves
  • 1 cup coriander leaves
  • 2 cloves garlic
  • 1 tbls capers, drained
  • ½ cup Olive oil
  • 2 tbls lemon juice
  • sea salt & black pepper

Grilled Potatoes & Steak

  • 5 Medium potatoes
  • Olive oil
  • Sea salt & black pepper
  • Barossa Fine Foods MSA Graded Rump Steak

Method

Salsa Verde

  1. Wash herbs & place in a food processor with the garlic & capers. Process until finely chopped.
  2. With motor running, add the olive oil in a steady stream, add the lemon juice.
  3. Season with sea salt & black pepper

Grilled Potatoes & Steak

  1. Boil potatoes & once cooked drain & allow to cool. Cut in half lengthways & place in a bowl.
  2. Season well with sea salt & pepper, drizzle with olive oil.
  3. On a hot BBQ grill or in a heavy based pan, grill the potatoes till hot & crispy.
  4. Serve Char grilled Rump steak drizzled with salsa verde, potatoes & greensalad.
